Shall we add milk or water to scrambled eggs? That is a good question. I found it better to add cream or milk when creating rich, smooth, creamy scrambled eggs, but better to add water when making light airy tender scrambled eggs, both versions covered in video.

1. Creamy Scrambled Eggs

This version is velvety and soft — almost luxurious. We cool the eggs off right after cooking with a splash of cream for that extra silky finish.

  • 2 eggs
  • 1 tbsp butter or oil
  • 1 tbsp cream or milk (cream preferred)
  • (Optional) 1/8 tsp salt – skip if you’re pairing with something salty like ham
  • (Optional) 1/2 tbsp fresh herb or 1/2 tsp dried herb – fresh is best
  • (Optional) 1/16 tsp black or white pepper – I often skip this

Tip: Add the cream after cooking to cool the eggs and keep them from overcooking. It also makes them extra smooth.

2. Light and Airy Scrambled Eggs

If you love fluffier eggs, this one’s for you. A splash of water before cooking gives them that light and tender texture.

  • 2 eggs
  • 1 tbsp butter or oil
  • 1 tbsp water (add before cooking)
  • (Optional) 1/8 tsp salt – again, skip if food is already salty
  • (Optional) 1/2 tbsp fresh herb or 1/2 tsp dried herb
  • (Optional) 1/16 tsp black or white pepper

Tip: Stir gently on low to medium heat to keep the eggs fluffy and tender.

3. Scrambled Eggs with Tomato (Fresh Version)

This is a classic comfort dish in many households — fresh tomatoes stir-fried with soft scrambled eggs. It’s simple, bright, and great on rice or with toast.

  • Cook scrambled eggs as above (creamy or airy version)
  • 3 cups chopped tomato (or about 2 medium tomatoes)
  • 1/8 tsp salt if eggs are salted; otherwise, use 1/4 tsp
  • (Optional) 1/4 tsp white pepper
  • (Optional) 1 tbsp ketchup
  • (Optional) 1/2 tsp sugar
  • (Optional) 1 tbsp oil to stir-fry tomatoes until soft

Tip: Stir-fry tomatoes first until soft and slightly saucy, then add the scrambled eggs and toss gently.

4. Scrambled Eggs with Tomato (Umami Version)

This is a richer version with deeper flavor, thanks to oyster sauce and optional garlic. It’s cozy, savory, and seriously satisfying.

  • Cook scrambled eggs as above
  • 3 cups chopped tomato (or 2 medium tomatoes)
  • 1/16 tsp salt if eggs are salted; otherwise, use 1/8 tsp
  • 1/2 tbsp oyster sauce
  • (Optional) 1/2 tsp garlic powder
  • (Optional) 1/4 tsp white pepper
  • (Optional) 1 tbsp ketchup
  • (Optional) 1 tsp sugar
  • (Optional) 1 tbsp oil to stir-fry tomatoes

Tip: This version is especially great with a side of rice or tucked into a wrap.
